All you need to make this delicious meal is:
3 large pieces of chicken, One very large onion, half peppers each: green, red, and yellow to make it colourful, garlic, a tin of chopped tomatoes, lots of spices of your choice, curry powder, pepper, salt.
Boil (3 cups water) the chicken just for 5 minutes together with all the spices so that it wont get overcooked throughout the process. After 5 minutes, don’t drain the water, that’s what’s going to make it juicy with all its spicy flavours and automatically makes a great chicken gravy. Remove from the stove and add chopped onions, peppers, tomatoes and garlic. Put the lid on and return to the stove to boil and reduce heat after 5 minutes. When the tomatoes are cooked, allow to simmer for at least 10 minutes and you are done. Serve with boiled Potatoes, carrots and butternut or rice if you wish. In fact, any other accompaniment of your choice will do. I tried with naan bread the other time with friends, it was delicious!
You don’t need to add any fat as the chicken already has lots of fat. If the fat is too much, it separates to the top at the first boil so you can always drain it out if you wish.
